I stumbled across this blog with a recipe for Lancashire Hotpot (i.e., the dish that John Thornton in North and South mentions as one of the meals produced in his mill's communal kitchen).
Sounds tasty, and a lot like pot roast :). I usually make a red wine beef stew, so I might give this a try instead now that the weather is definitely getting frosty.
I found a number of other recipes that call for lamb and liver (lamb mostly), but I imagine I'll stick with either beef or maybe lamb, but not liver. The crispy potato layer at the top looks delicious.
